In general Im open for a variety of genres demographics and decades but I do have a soft spot for fantasy adventure steampunk and supernatural horror.
Also I play games read novels watch western animation and live action movies and series sometimes a few times a year. I read ca. 1020 novels a year. Although my main entertainment media has been and still is anime and manga. Plus since a bunch of years TTRPGs.
My relationship with anime and manga is complex tho. I love anime yet I dislike most of it and I love animation and all art in general not just anime.
I also dont add any anime I just looked into and dropped.

Uhm because Im old. Lot of childhood series arent completed I just watched a bunch of episodes.
On average I engage myself into anime and manga for 14 hours a day since 20+ years so yeah... that adds up.
Often I just take a look into a show and decide if I should keep it.
Recommendations?
Please do not recommend something to me I always got a lot of anime to watch and manga and novels also western ones to read.

Never Watched Much Of / Not Fond Of Series Like ...
One Piece Naruto Bleach Fairy Tail Hero Academia Demon Slayer Black Clover Fire Force ... lot of lengthy and popular battle shounen with a few exceptions.
Not fond of most ecchi because its too often very juvenile.
I dont care about most ball sports anime and school romances either.
What I DisLike In Characters
In general I like various types of characters except bland slates edgelords co.
Also Im not fond of strong independent women who are just acting like a bratty and rude teenager like a macho man or look down on other women. This is mostly an issue in some western life action and animated shows. But yeah no... not a fan of girlbosses at all. I dont need men with toxic masculinity and I especially dont need women with toxic masculinity.
For and foremost I like kind characters who feel real and manage to have depth without coming across too much as goodietwo shoes holier than thou or doormats. In most cases.
In general I like complex and fun quirky characters with different sides to them and I like goodnatured people who fucked up in some way or another and get some interesting inner struggles to deal with.
Also I like often powerful or influental characters who have to deal with the responsibility coming with their power and position they are in.
Im really fond of especially intelligent women and nonbinary characters with strong passions and in general I like competent characters. Also its great to see characters who I can interpret as neurodivergent without them being the extremely antisocial and robotic stereotype portrayed as pitiful or similar. Love the weird but also quite social scientist / artist / writer type.
